All the caffeine without the gluten!!
Sounds good, but are the antioxidants preserved or are they destroyed or altered during the milling and processing of the coffee beans into flour?
Even if the antioxidants are destroyed or rendered inert during the processing, you still yield a usable (palatable?) flour product that has no gluten and less carbs
Which antioxidants, specifically?
Is it 3x’s the volume of antioxidants and/or 3x’s as many different antioxidants as blueberries?

This sounds like a promising, non-gluten alternative to wheat flour. Looking forward to trying this when it hits the shelves.
